LUNCH GOALS WITH BOTANIST
Last week I was completely spoiled by Botanist in Vancouver! I had the most delectable lunch ever and I can’t wait to share with you my experience.
I have been dying to go to Botanist for quite some time. Every time I come across their Instagram-worthy pictures, I get hungry! Pink velvet, outdoor terrace garden (over 50 different types of plants no joke) and cute cocktails- I am 100% sold. The restaurant is upstairs in one of my favourite Vancouver’s hotels — Fairmont Pacific Rim.
Let me tell you- don’t wait another day to clear your schedule and book your reservations. You won’t be disappointed!

Started out with WHAT THE FLOWER cocktail 🌸
(Gin, Electric Daisies, Cherry Blossom Tea, Lemon, Ginger, Cardamom)
FOOD. The important (and my favourite) part right— was unbelievable. If you know me, then you know I am a HUGE foodie. Right away we were brought the famous house-made bread by Pastry Chef Jeffry Kahle’s signature Provence- inspired Fougasse.
Followed by wild mushroom, garlic cream, crispy polenta, chicken jus with poached hen eggs. Next came a salad with green grapes, tarragon, goat cheese, balsamic and watercress. What I really enjoyed is that I never felt rushed at any point during our lunch. My girlfriend and I were able to have fun, relax and enjoy yummy food.
I was undecided on what to get for lunch and so appreciate it when servers know the menu so well that they can guide you based on your preferences. He suggested the Halibut since it was in season and the Albacore tuna. Both were absolutely delicious!
To finish off, our server surprised us and brought his personal favourite for dessert. O.M.G! He brought what looked like a fancy taco- dessert version (he knows me well 😂). Apricot sorbet, cocoa tuile, nib brittle, pistachio sponge, Esmeralda Creméux. All those things equal absolute perfection on a plate!
